An update, I created https://motomap.org to host some pre-built maps for the US.
Also uploaded a YouTube video that will show you how to mark the surface of roads in OpenStreetMap which will in turn feed the motomap map coloring. https://www.youtube.com/watch?v=L6S9UUMdVdg

I just updated an open-source set of shell scripts/map styles that generate maps that show dirt roads and tracks in a different color. I only have a Zumo XT and a BMW Nav V (that I only use with stock maps) so it's only tested on that but I thought I'd share since the methodology should be the same ...

I was able to do this using Openstreetmap data and a custom made map, but not without a lot of effort. I'm posting the code on Github here https://github.com/markcushman/motomap if anyone wants to try to replicate this. I'm modifying the scripts to create bigger maps eventually but the code there ...
