I have now acquired a 590, iPhone & Sena headset. Can anyone tell me how I connect the 3 together or even if it’s possible.

It's certainly possible or it should be!
But first some questions so you can get the best out of the setup.
Are you only going to want to take calls when the sat nav is with you?
Will you ride without the sat nav often?

I will ride with and without the sat nav as the mood takes me. I will probably use it most of the time but don’t take a lot of calls I just like the idea of staying in touch.

Then chances are you will want to be able to receive calls when not having the sat nav
I would pair the phone to the headset and the headset to the zumo and not phone to zumo
