Hmmm, don't understand your question (or problem)!?
I think, you'll never will have a problem while fueling up, even when you take a quick lunch or so for one hour - when you fire your engine up again, the Zumo XT will be loading and also does the battery of your motorbike!? Do you really get in a situation that you'll stand for more than two or three hours somewhere without running the bike?
Should this be the case, i always would shut down the Zumo XT and put it away from the motorcycle mount (or just connect it to a switched circuit!)...

"Discharge safety" in that calculator means "Percentage of battery capacity that is never used." So if you put 10 in that field, that would mean the bike's battery would be 90% depleted and the bike probably would not start.
I made a number of electrical measurements when I first received my XT, which I reported here. The actual maximum current draw that I found (screen at maximum brightness, internal battery charging) was only 0.58 A at 13.6 V.
Put the XT in standby (single tap on the power button) and that current drops to 2.44 mA.
By your calculator, retaining 90% of the bike battery capacity, and keeping the screen on, you could stop for 1.724 hours. (1 Ah/0.58A= 1.724 h) You could stay longer if the internal battery did not need to be charged.
Put the XT in standby and you can enjoy the pleasures of gas station food and bad coffee for about 2.5 weeks, AND you can resume your route exactly where you left it with just another tap of the power button. (1 Ah/0.0024A= 409.8 h)
More practically, wire the mount to a switched power wire. When you turn off the ignition, power to the XT will be cut, it will warn you that it is turning off (actually going into standby) and give you an option to stay awake. The XT can remain asleep using only internal battery for several days, and then resume automatically when you turn on the ignition. Another advantage of switched power rather than wiring direct to battery is that the empty mount/voltage converter still draws 0.15mA - not much, but not zero either.
Actually turning the XT off requires that you press and hold the power button until it you agree to shutdown. That requires re-starting any route in progress.

Being mindful of differing bike batteries, age, etc. but my XT mounted and on takes at least 2 weeks to drain the battery to the point that the bike won't start. I know- rather than guess, calculate or trust the internet I tested it. Plus:
a) I installed a lock so I'm not repeatedly removing and re-installing at every stop;
b) I have mine wired directly to the battery so it never shuts off. An old habit from the 595 with its crappy battery life, and I will often use the device while stopped to alter my route. The 595 was not so good at this on battery power;
c) the empty mount takes at least 3 months to drain my battery to the no-start point. That's the minimum I go, without a battery tender, without starting the bike during the winter.
IMHO draining the bike's battery is a non-issue.

this time I put 90% in the Discharge Safely field, and it calculates 1.724 hours batter life, which is great, because I can stop to gas up and go again in less than 20 minutes, thanks for your post, very helpful.

FWIW my XT is wired into the ignition. I put it into my locked pannier for stops when the bike's out of sight, not least because I don't like leaving it sitting in the rain! On restarting it picks up the route where I left off. I never fully shut down the XT, even overnight, even on a fortnight's tour. Never had a battery problem.
